Spiced Battered King Prawn with Indian Slaw
These flavourful prawns are quick, easy, and way more delicious when made at home. With a simple marinade of ginger and garlic and a perfectly seasoned, crispy batter, you'll be serving up restaurant-quality seafood with minimal effort. It’s the perfect simple starter or light dinner that’s guaranteed to impress.

Ingredients
24x King prawns
160g Self-raising flour
250ml Sparkling water
5g Crushed garlic
5g Cumin powder
5g Curry powder
2g Chilli powder
Ingredients for slaw
150g Shredded red cabbage
130g Shredded white cabbage
100g Grated carrot
100g Sliced onion
10g Chopped coriander
5g Cardamon pods
5g Curry powder
5g Tumeric
Accompaniments
8x Poppadoms
160g Mango Chutney
The method
1. Put the ginger and garlic onto king prawns and mix (marinate for a minimum of 4 hours)
2. To make the batter, add cumin, curry powder and chilli to the flour. Add sparkling water and whisk until the batter is smooth (set aside for later use).
3. To make the slaw, mix all the ingredients and set aside.
4. To assemble the dish, coat with flour, then dip into the batter and deep fry until crispy and cooked. Drain and serve with Indian slaw, poppadoms and mango chutney.
5. Enjoy!
