King Prawn & Avocado Bruchetta
This King Prawn and Avocado Bruschetta is incredibly easy to make, yet feels completely gourmet. It combines crispy sourdough slices with warm, garlicky king prawns, creamy avocado, and a splash of lemon.

Ingredients
8x Slices of sourdough bloomer
50ml Olive oil
24x Raw shelled king prawns
50g Salted butter
10g Crushed garlic
300g Chunky tomato salsa
2x Ripe avocados
8x Lemon wedges
50g Rocket
The method
1. Brush the sourdough slices with olive oil and bake in the oven at 170 degrees Celsius for approximately 7-8 minutes. Heat the butter, then add garlic and the king prawns and cook for approximately 2-3 minutes until the prawns are cooked. Then thinly slice the avocados.
2. To assemble the dish, top the sourdough slices equally with salsa, then place on the king prawns, avocados, lemon and rocket.
3. Serve and enjoy!
